Yay Summer!!!

Here’s a quick entry to celebrate more than one sunny day in a row! Woo hoo! I’m going to be making a bunch of different popsicles this summer so this one is just to get the ball rolling.

mang0-lime popsicle

1 mango, peeled and chopped

juice of 1 lime

1 T honey/ simple syrup

1/3 c sparkling water

blend until relative;y smooth and pour into popsicle molds

freeze until firm

unmold and eat!

These turned out pretty good and aren’t super sweet, definitely a grown up popsicle. I’m going to be trying out some more exotic flavours through out hte summer and will hopefully be getting a blender. I use a hand blender which works okay but is kind of messy and limits the amount I can make.
